From the roaster

Timor Leste (East Timor) is a consistent source of balanced, clean coffees and the first offering from the region for Top Cup. These farmers are delivering whole coffee cherry to a central processing station instead of managing the wet processing individually at home. The Daurfusu wet mill is located in Dukurai village, Letefoho District. Initially comprised of 37 members in Dukurai, the operation has cast a wider net this year and is buying coffee from neighboring high altitude zones as well. Farmers in this area are growing a mix of cultivars, mostly Timor Hybrid and Typica, at altitudes of 1400 to 1600 meters above sea level. This is another beautiful Farm Gate coffee and an excellent choice for espresso.

Cupping Notes: Raisin, red apple, peach skin, German chocolate cake, and smokey cacao nibs

Context

Sourced from the Dukurai Village in the Letefoho region of East Timor, this Timor Hybrid lot represents the unique terroir of the island. Processed using the washed method, which typically emphasizes a coffee's inherent acidity and clean finish, this selection by Keia & Martyn's Coffee highlights a complex profile. The cup presents a distinct interplay between bright fruit notes like raisin, red apple, and peach skin, balanced by the deeper, indulgent qualities of German chocolate cake and smokey cacao nibs.

When evaluating such a diverse range of flavors, it is helpful to reference the flavor wheel to better categorize these nuanced sensory experiences. Grown at an altitude of 1400-1600 masl, this coffee showcases the potential of the Timor Hybrid varietal when cultivated in high-elevation environments. By focusing on the clarity provided by the washed process, the roaster has crafted a profile that bridges the gap between vibrant orchard fruits and rich, dessert-like undertones.
