Welcome to Colombia season
Jesus Ramos built this 2.5 hectare farm rooted in the belief that specialty coffee could become a sustainable long term livelihood and a promising future for his family. Jesus grew up in the city working in restaurants, before building this coffee project in La Florida high in the mountains.
Process: For this castillo varietal lot, only the ripest cherries were hand picked, then depulped and traditionally fermented for 12hrs. The coffee seeds then undergo drying phase for 10-15 days on the farm's patios.
