Amor Prohibido, an instant coffee offering from Little Waves Coffee Roasters, represents a convenient approach to the classic profiles found within American coffees. By utilizing a washed process, this coffee emphasizes a clean, balanced cup that highlights the inherent characteristics of the bean. Generally, washed coffees are celebrated for their clarity and consistent acidity, often providing a stable foundation for the development of sweet, dessert-like profiles.

In this specific lot, the roaster identifies notes of toffee, milk chocolate, and orange. These descriptors align with the foundational categories found on the flavor wheel, which helps tasters categorize the complex sugars and citrus tones often present in high-quality roasts. For those interested in how the removal of the coffee cherry’s fruit flesh impacts the final cup, our processing methods explainer provides further insight into why this method is favored for its ability to showcase the bean's primary flavor profile.
