Tasting Notes: Spicy, Sweet, Balanced

Colombia, a coffee growing powerhouse located in South America has been producing coffee for centuries. Coffee producers here typically cultivate their coffee on less than 5 acres of land in the cool mountain climates, highly suitable for specialty coffee. Once coffee is harvested, it is processed at their own micro-wet mills and then dried on site to a safe moisture content before final processing at an offsite dry mill. Colombia’s main harvest season is during the months of October and January. However, growing regions in this country are large enough with varying climate shifts, lending to a fly crop that happens between April and June.

Also available as a Medium Roast.

Context

Colombia is widely recognized for producing some of the world’s most consistent and approachable beans, often characterized by a reliable sweetness and a clean finish. This Colombia Dark selection, roasted by Montana Coffee Traders, highlights the classic profile associated with the Colombia region. By utilizing the washed process, the roaster emphasizes the inherent clarity of the bean, allowing the inherent sugars to develop during the roast without the interference of fruit-forward fermentation notes often found in other methods.

The resulting cup is described as spicy, sweet, and balanced. For those looking to better understand how these specific descriptors fit into a broader sensory experience, consulting a flavor wheel can be an excellent way to identify the nuances within this dark roast. This coffee serves as a quintessential example of how traditional processing and careful roasting can create a harmonious, everyday brew that remains both complex and deeply satisfying.
