From the Cerrado Mineiro region of Western Brazil comes our Brazil Cascavel Vermelha. This unique growing region is notably flat and low-elevation, with well-defined seasons that lend coffee from this area a distinct terroir, with caramel sweetness and nuttiness paired with a mild acidity. This naturally-processed coffee is picked with highly-sensitive mechanical harvesters, which are designed to only remove only the fully ripe cherries from the trees. After harvesting, the coffee is laid out on patios to dry in direct sunlight, while being closely monitored to ensure even drying occurs. This coffee is a dependable favorite in our lineup, with notes of milk chocolate, maple, and pecan.

Context
The Brazil Cascavel Vermelha, sourced by Ozo Coffee, hails from the Cerrado Mineiro region, a landscape defined by its distinct seasonal climate and elevations ranging from 800 to 1100 masl. This specific lot undergoes a natural process, a technique where the coffee cherry remains intact while drying, often resulting in a heavier body and pronounced sweetness.
In the cup, this coffee presents a profile characterized by rich, dessert-like qualities, including cocoa, milk chocolate, and maple, balanced by the savory depth of cashew butter and pecan. The "jammy" descriptor suggests a concentrated fruit sweetness, a common trait in well-executed natural coffees. To better understand how these specific characteristics align with broader sensory categories, consult the flavor wheel. This selection highlights the classic, comforting profile that has made the Cerrado Mineiro region a cornerstone of high-quality Brazilian coffee production.
