Our Burundi Kibingo is back for the season! This beautiful naturally processed coffee is a bright and fruit-forward red bourbon from the Kibingo Washing Station in Kayanza, Burundi. This washing station serves just over 1,700 members in this region, an area 50 miles south of Lake Kivu, where the coffee benefits from some of the most ideal growing conditions: high altitude, rich volcanic soils, and a temperate, humid climate. This allows for the coffee cherries to ripen slowly, resulting in a complex, sweet cup with delicate layers of flavor. We've been sourcing coffee from Kibingo for years, and are thrilled to bring back this stunning lot, with vibrant notes of cola, cacao nibs, and sparkling blackberry acidity.

Context

The Burundi Kibingo Natural, sourced by Ozo Coffee, represents a distinct expression of the Kayanza region. This lot features the Red Bourbon varietal, a plant historically celebrated for its balanced sweetness and complex acidity. Grown at elevations between 1700 and 1900 meters, the cherries undergo a natural process, a method where the fruit remains intact during drying to encourage deeper sugar development.

In the cup, this coffee presents a profile characterized by notes of cherry cola, chocolate, and plum. While natural-processed coffees often exhibit heavier fruit tones and increased body, the specific interplay of these flavors can be further explored using a flavor wheel. By highlighting the unique terroir of the Kibingo Washing Station, this selection offers a compelling look at how traditional processing techniques and high-altitude cultivation influence the final character of Burundian coffee.
