We’re excited to announce our special release microlot from Nazareth Robles, a fourth-generation coffee farmer from Tarrazú, Costa Rica. This year marks our third collaboration with her. At her family farm, El Balar, Nazareth has focused on fermentation and natural processing, producing unique, vibrant coffees with tropical flavors. The cherries are meticulously sorted, fermented for three days, and dried for a week using a static mechanical dryer. The resulting coffee is sweet and rich, with notes of mango, papaya, rum raisin, and a distinct honey sweetness. We are proud of Nazareth’s work and look forward to continuing our partnership with her.

Context

The Costa Rica Nazareth Robles | Special Reserve, roasted by Ozo Coffee, represents a focused expression of the Tarrazú region. Produced by Nazareth Robles at 1800 masl, this lot utilizes the Catuai varietal, a staple in the country known for its adaptability and consistent cup quality. By employing a natural process, the producer allows the coffee cherry to dry intact around the bean, a technique often associated with increased sweetness and complex, fruit-forward profiles.

In the cup, this coffee presents a distinct character featuring notes of mango, honey, rum raisin, and papaya. While natural-processed coffees often exhibit heavier fruit tones and syrupy textures, the specific expression here highlights the unique terroir of Tarrazú. For those looking to better identify these nuances, referencing a flavor wheel can be a helpful tool for mapping the interplay between the honeyed sweetness and the tropical fruit acidity found in this reserve lot.
