From the roaster

Fazenda Jaguara is one of our long standing partners and a farm we continue to work with year after year. We value not only the quality of the coffees they produce, but also the care and intention behind how they grow them.

Founded in 2001 by agronomist Antonio Wander and later led by André Luiz and Natália Brito, Jaguara focuses on responsible farming and thoughtful processing. Located in Campo das Vertentes, Brazil, the farm produces natural processed coffees known for sweetness, balance, and a clear chocolate forward profile.

For this release we chose an omni roast profile so the coffee performs well as both espresso and filter. As espresso it is smooth with deep sweetness, while as a filter it becomes softer and more fruit forward while still grounded in chocolate.

Expect notes of milk chocolate, ripe plum, and a honey like sweetness.

Pallet Coffee Roasters

Context

Natural-processed coffees tend to develop fuller body and pronounced fruit character, and this lot from Natalia Brito in Campo das Vertentes, Brazil exemplifies that profile. Pallet Coffee Roasters identifies milk chocolate, ripe plum, and honey-like sweetness—a combination that reflects how the natural process allows extended fruit contact during drying. The interplay between the plum's darker stone-fruit notes and the honey's rounded sweetness creates a distinctive balance typical of well-executed naturals from this region. This is a coffee that rewards exploration on the flavor wheel, revealing layers as it cools.
