TASTING NOTES: Orange, Lemon Zest, Graham Cracker
We are proud to have been working with Israel Salazar’s Finca Loma El Marcelo for eight years now. Finca Loma El Marcelo is a beautiful and sustainable farm of just seven hectares. It is located high in the mountains above Sotará in the department of Cauca, Colombia. Coffee grows on about half of the farm, with the other half growing a diverse range of food crops including vegetables, beans, oranges, plantains and sugarcane. The farm also keeps bee hives and dairy cows. A natural water spring provides clean water for Israel’s family, animals, crops and for the processing of coffee.
This coffee is processed in the washed method and dried on raised beds on the farm. It is an intense, bright and fruit forward coffee with notes of sweet orange, lemon zest and graham cracker. We especially appreciate the variety of intense and vivid fresh fruit flavors. From Cauca Colombia, please join us in enjoying the fruit of Israel Salazar´s hard work.

Context
This washed Castillo from producer Israel Moncayo Salazar in Cauca, Colombia showcases the bright, clean character typical of the washed process. The roaster Panther Coffee identifies distinct citrus and sweet grain notes—orange and lemon zest paired with graham cracker—that suggest a balanced cup with both acidity and subtle sweetness. Castillo, a hybrid varietal developed for disease resistance and productivity, can express crisp, straightforward flavor profiles when processed with precision, as evidenced here by the clear separation of these tasting descriptors.
