From the roaster
Dried cherry, cacao nib, praline
Our first single-origin release from Brazil returns. The Schiavo family, four generations in coffee, farm twenty hectares in the hills above Castelo, Espírito Santo, where washed processing and a cool coastal climate yield unusually clean, sweet coffees. This lot is rich and creamy, layered with dried cherry, cacao nib, and praline.

Context
Produced by the Schiavo family in the Castelo region of Espírito Santo, Brazil Sítio Forno Grande represents a meticulous approach to regional coffee production. While many Brazil · Castelo, Espírito Santo coffees are known for their nutty profiles, this specific lot is processed using the washed method, which typically emphasizes a cleaner cup profile and heightened acidity. Roasted by Parlor Coffee, the coffee presents a balanced sensory experience characterized by notes of dried cherry, cacao nib, and praline.
When evaluating such profiles, tasters often reference the flavor wheel to identify the nuances between the sweetness of praline and the deeper, bittersweet qualities of cacao. Because washed coffees often highlight the inherent characteristics of the bean rather than the influence of the fruit flesh during drying, this selection offers a clear expression of the Schiavo family’s harvest. It serves as a refined example of how traditional processing techniques can elevate the classic, comforting flavors associated with Brazilian coffee.
