Context

Sourced from the Sertão estate, this Brazil offering showcases the distinct character of the Yellow Bourbon varietal. As a natural-processed coffee, the beans are dried within the fruit, a method often employed to enhance sweetness and body. While natural-processed coffees frequently exhibit heavier fruit profiles, this specific lot from Partners Coffee leans into a comforting, dessert-like spectrum, highlighting notes of cocoa, fresh fig, roasted hazelnut, and honey.

Brazil remains a cornerstone of global production, with regions like Brazil providing the ideal climate for these traditional cultivars to thrive. When evaluating the complexity of such profiles, tasters often reference the flavor wheel to better identify the nuances between nutty undertones and the subtle, jammy sweetness characteristic of dried-in-the-cherry processing. This selection serves as a refined example of how careful cultivation and processing can elevate the classic, approachable profile expected from high-quality Brazilian harvests.
