History

We began sourcing from Juanachute in 2026, marking the start of what we hope will be a long-term partnership with the Castro family. Based in Costa Rica's renowned Los Santos region, the family were pioneers of the country's micromill movement and continue to oversee every stage of production. Their farms use water-efficient washed processing, careful sun drying on raised beds, and biodiverse farming systems that help protect local ecosystems and natural resources. Alongside producing exceptional coffee, the Castro family invests in the future of Costa Rican coffee through local education and barista training. This washed Catuaí lot reflects both the region's classic clean, balanced cup profile and the family's commitment to quality and sustainable farming.

Context

Produced by Luis Anastasio Castro and his family, this Juanachute lot represents the meticulous standards of Costa Rica · Los Santos, Tarrazú. The coffee is comprised of the Catuaí varietal, a plant widely recognized for its high yield and adaptability to the specific microclimates found within the region. By utilizing a washed process, the producers emphasize the inherent clarity and structural integrity of the bean, allowing the distinct profile of yellow plum, macadamia, and caramel to shine through.

Sourced and roasted by Prolog Coffee, this selection highlights the balance often sought in high-elevation Costa Rican coffees. While washed coffees are frequently celebrated for their clean, bright acidity, the specific terroir of the Los Santos region often contributes a rounded sweetness that complements the nuttier undertones of the Catuaí variety. For those looking to further explore the nuances of these flavor profiles, the flavor wheel serves as an excellent resource for identifying these specific sensory characteristics.
