Context
Produced by Merci Fernandez in the Colasay region of Peru, La Pomarrosa Bourbon represents a meticulous approach to high-altitude coffee cultivation. This lot features the Bourbon varietal, a plant historically celebrated for its balanced sweetness and complex cup profile. By utilizing a washed process, the producer emphasizes the inherent clarity of the bean, allowing the delicate notes of apple, nectarine, and honey to shine through with precision.
Sourced by Prolog Coffee, this selection highlights the potential of Peruvian coffee when managed with careful attention to detail. While washed coffees are often prized for their clean acidity and refined structure, the specific terroir of Colasay contributes a distinct character to this harvest. For those looking to further explore the nuances of this cup, referencing a flavor wheel can be a helpful tool in identifying the subtle interplay between the fruit-forward acidity and the underlying honeyed sweetness present in this exceptional Bourbon.
