From the roaster

We found this coffee to be almost candy-like, with aromas of cherry, nougat, and Swiss chocolate. When sipped, we found notes of candied pecan, butterscotch, and papaya, with a dried mango acidity. The smooth finish reminds us of honeycomb and cashew.

The Story

Imported by our friends at Caravela Coffee:

“Sebastián Jiménez and his brothers, Jorge and Carlos, are a true example of family unity and shared purpose. As third-generation coffee producers, they inherited their passion for coffee from their grandfather and father. In 2005, they founded Finca Palermo, named in honor of their grandfather and their family’s legacy.

"In 2020, Finca Palermo caught the interest of Caravela, who began exporting their coffee at better prices and providing support through their Program of Education for Coffee Producers (PECA) technical assistance program. This program provides knowledge and support to improve farming and harvesting practices, increasing yields, improving quality, and preserving the environment. The brothers devote 25% of their 24-hectare farm to coffee.

"Today, the Jiménez brothers are proud to know that their coffee is not only recognized for its quality but is reaching international markets—fulfilling a long-held dream fueled by family, legacy, and a commitment to excellence.”

Context

Produced by Sebastian Jimenez in the Zamora Chinchipe region of Ecuador, Finca Palermo AAA Washed represents a focused expression of the San Salvador varietal. This lot is processed using the washed method, a technique typically employed to highlight the inherent clarity and acidity of the bean. While washed coffees are often celebrated for their clean, vibrant profiles, this specific selection offers a distinct sensory experience characterized by notes of golden raisin, Swiss chocolate, and cashew.

Sourced by PT's Coffee Roasting, this coffee showcases the unique terroir of its 1650 masl origin. For those looking to better understand the nuances of these specific tasting notes, referencing a flavor wheel can be an excellent way to categorize the interplay between the dried fruit sweetness and the deeper, nutty undertones present in the cup. This offering serves as a compelling example of the quality emerging from Ecuador’s evolving specialty coffee landscape.
