PRESERVING TRADITION AND PURSUING EXCELLENCE: A GLIMPSE INTO HARD WORK, PASSION, AND VALUES DRIVING THE NEXT GENERATION OF COFFEE FARMERS IN COLOMBIA.

Luz Divia Fierro (Sandy) and her husband Elpidio (Pillo) run the El Meson coffee farm in the small community, of Berlin, Huila. The couple inherited the farm from Pillo's father, who is also a coffee producer and continues to farm nearby. After moving onto the property, they added 26,000 Pink Bourbon trees to their existing 11 acre planting of 20,000 trees. In addition to coffee, Sandy and Pillo grow plantains, yucca, and sugar cane to feed their workers and themselves. They also keep four cows for milk.

After the cherry is collected from the fields, Pillo carries out the post-harvest processing in the wet mill. The harvest is put into large tanks filled with water to "float" and sort the coffee. The next day, Pillo de-pulps and ferments the beans for another 60 hours in tanks. He then washes the coffee once and puts it out to dry on his rooftop-style dryer for up to 18 days.

Across Latin America, coffee harvests rely on an often unseen migrant workforce. Many pickers face unstable conditions and low pay, while farmers struggle to secure skilled labor during critical harvest windows, challenges made even harder by climate unpredictability. To help address this, exporter Azahar launched the Pickers Project in 2017 through its Colombian foundation, Manos al Grano. The program trains full time professional pickers and provides them with stable salaries and benefits, then deploys them to partner farms as needed. For pickers and for producers like Sandy and Pillo, initiatives like this represent a meaningful step toward a more sustainable and equitable future for coffee-growing communities.

Pillo and Sandy’s dedication to their farm and community represents a younger generation of coffee growers from southern Huila who also honor their family's legacy. We are fortunate to be able to roast and share this coffee, and look forward to the future of El Meson.

Orders placed by 4:00 p.m. on Sunday, Monday, and Wednesday will roast and ship the next day. Thank you!

Context

Produced by Luz Divia Fierro and Elpidio Calderon in the Huila region of Colombia, this lot showcases the distinct profile of the Pink Bourbon varietal. While Pink Bourbon is often celebrated for its complex acidity and sweetness, the specific character of a coffee is heavily influenced by its processing method. In this instance, the producers have utilized a washed process, which typically highlights the clarity and brightness inherent in the bean.

Roasted by Ruby Coffee Roasters, this selection presents a vibrant sensory experience featuring notes of strawberry, orange blossom, limeade, and cola. To better understand how these specific descriptors fit into the broader spectrum of coffee profiles, you can consult the flavor wheel.
