At the famous Volcan Azul estate in Costa Rica, producer Alejo has introduced modern fermentation methods to achieve extraordinary flavour profiles. For the first time, we are featuring H3, a hybrid of Ethiopian heirloom and Caturra varietals. In this 'warm anaerobic' lot, the H3 cherries are exposed to higher temperatures during fermentation. The result is a deliciously funky profile, full of blueberry and fig sweetness.

Context

Produced by Alejo Castro Kahle at Volcan Azul in the West Valley region of Costa Rica, this H3 varietal lot represents a meticulous approach to modern coffee production. The coffee is processed using an anaerobic method, a technique that often influences the final cup profile by intensifying sweetness and altering the development of acidity. While the roaster, The Barn, identifies specific notes of blueberry and fig in this particular harvest, anaerobic processing is frequently associated with complex, fermented fruit characteristics that can be mapped using a flavor wheel. Grown at 1550 masl, this selection highlights the ongoing experimentation with unique varietals like H3 within the Costa Rican landscape. By focusing on controlled fermentation environments, producers like Castro Kahle continue to push the boundaries of what is possible in regional coffee profiles, offering a distinct experience that bridges traditional terroir with innovative post-harvest techniques.
