Sourced from a farm owned by Rodolfo Ruffatti Batlle, a 5th-generation coffee farmer, in Finca El Salvador. He prioritizes diverse varietals and processing methods to enhance coffee quality, increase its value, and ensure better wages for farmers.

More recently he had started a coffee school and taken on a lease to regenerate land at a high-altitude farm to run processing and infrastructure for surrounding producers where access has been precarious in the past.

This natural coffee is best enjoyed as a filter brew, which results in a clean tasting cup that is bright, crisp and complex.

We recommend paring with: Cherry Bakewell tart

Context

Produced by Rodolfo Ruffatti Batlle in El Salvador, this Piemonte lot represents the meticulous standards of high-quality coffee cultivation. As a washed coffee, the beans undergo a traditional processing method that typically emphasizes the inherent clarity and acidity of the bean, allowing the specific terroir of the region to shine through. Roasted by Volcano Coffee Works, this selection highlights a balanced profile featuring notes of toffee, toasted almonds, and cherry.

When evaluating such a profile, enthusiasts often look to the flavor wheel to categorize these distinct sensory experiences. While washed coffees are frequently celebrated for their clean, crisp finishes, the inclusion of stone fruit and nut-forward characteristics in this specific roast offers a comforting, classic cup. By focusing on the precision of the washing process, this coffee showcases the dedication of the producer in delivering a consistent and refined experience for the discerning palate.
