Our latest filter blend is a combination of Cerro Alto micro mill and Peach co fermented coffee from the Jairo Arcil a's Santa Monica farm.

Combining the SL28 varietal for its clarity and bright sweet citrus notes with the punchy peach and rich coconut notes only found in these experimental co-ferments. The result is a syrupy fruit punch with an aroma that turns heads.

Recommended Recipe: Slowly pour 150ml of hot water (92-96°C) over 3 minutes.

Sourced from Cerro Alto in Costa Rica and Santa Monica in Colombia, the lots from producers Jairo Arcila and Fernando Elias undergo a creative White Honey and Peach co-fermented honey processing method—a technique that infuses the beans with stone-fruit character throughout fermentation. The blend pairs SL28 and Castillo varietals, grown between 1600–2000 meters altitude, to deliver the roaster's tasting profile of stewed peach, coconut, lemon, and sweet pastry notes. Honey-processed coffees typically develop fuller body and pronounced sweetness; this lot's peach co-fermentation amplifies those fruit-forward characteristics. The drip-bag format makes this a convenient single-serve option for exploring the producers' microlot work.
