From the roaster

Context
Produced by Wildan Mustofa and Atieq Mustikaningtyas in the West Java region of Indonesia, the Frinsa Honey Tempe represents a unique intersection of traditional cultivation and experimental processing. This lot undergoes a honey process enhanced by a prolonged fermentation using Rhizopus, a technique that pushes the boundaries of standard post-harvest practices. Honey-processed coffees often retain a portion of the fruit mucilage during drying, which can contribute to a syrupy body and increased sweetness. To better understand how these specific processing choices influence the final cup, you can explore our processing methods explainer.
Roasted by Belleville Brûlerie, this coffee presents a distinct profile characterized by dried red fruits, watermelon candy, and caramel. These descriptors can be mapped against the flavor wheel to help identify the nuanced layers within the cup. Grown at 1400 masl, this Indonesian selection highlights the innovative spirit currently shaping the specialty coffee landscape in Java.
