Colombia: Wilder Lazo Pink Bourbon
Roasted by Broadsheet Coffee
This Pink Bourbon coffee features a unique lemongrass washed process that imparts floral qualities and a sweet guava candy finish.

From the roaster
Wilder Lazo's (Lasso) gorgeous coffee is back! This pink bourbon uses a process called "lemongrass washed". We’ve featured Lazo’s lemongrass washed geisha from his farm La Dinastía earlier this year. The fermentation tank this coffee is processed in was also used for a lemongrass co-ferment. After removing and draining the co-ferment, this coffee undergoes fermentation in the same tank. It gains a more floral quality from this "essence of lemongrass". The fragrance of honeysuckle carries through to the first sip, and eventually mellows into the herbal lemongrass citrus note. The trademark tropical fruit blast of pink bourbon shows itself with a sugary sweet guava candy finish. We have a very limited quantity of this coffee, so don't miss out!

Context
Produced by Wilder Lazo in Colombia, this Pink Bourbon lot showcases the innovative potential of modern processing methods. The Pink Bourbon varietal is often celebrated for its complex acidity and sweetness, and here it undergoes a unique lemongrass washed process. This specific technique aims to amplify the inherent characteristics of the bean, resulting in a cup profile defined by honeysuckle, lemongrass, citrus, and tropical fruit, with a distinct finish reminiscent of guava candy.
When exploring such nuanced coffees, it is helpful to reference the flavor wheel to identify the subtle interplay between floral aromatics and fruit-forward acidity. This offering from Broadsheet Coffee highlights how meticulous post-harvest handling can transform a classic varietal into a vibrant, expressive experience. By focusing on the synergy between origin and technique, this coffee provides a compelling look at the evolving landscape of specialty production in the Huila region.
