Context
Produced by Yermy Pedraza in Colombia, this La Joya lot showcases the distinct profile of the Pink Bourbon varietal. While Bourbon-derived cultivars are often celebrated for their balanced sweetness and complex acidity, this specific offering from Case Coffee Roasters highlights a vibrant intersection of fruit and confectionary notes. The cup presents a bright clarity reminiscent of honeycrisp apple and raspberry, rounded out by the comforting, dense sweetness of vanilla cake.
When evaluating such nuanced profiles, it is helpful to reference the flavor wheel to better categorize the interplay between the crisp orchard fruit acidity and the underlying sugary base. Pink Bourbon is frequently sought after for its ability to bridge the gap between traditional washed-process clarity and the expressive, fruit-forward characteristics often found in more experimental processing methods. This selection serves as a refined example of the potential found within the high-quality harvests currently emerging from the region.
