Coffee Details

La Cumbre Farm was founded in 1872 by Mr. Cornelio Lemus, the great-great-grandfather of Emilio López Diaz, and has remained in the family for five generations. Emilio began overseeing and managing La Cumbre in 2004.

Originally planted with Red Bourbon varietals, Emilio had introduced some major renovations in the last few years after the coffee rust hit the farm. Seeking to push the boundaries of what varietals could be cultivated in the local area, Emilio introduced the Yellow Bourbon and Pacamara cultivars in 2013, the Gesha variety in 2014 and the SL-34 variety in 2015.

Context

Produced by Emilio López Diaz in El Salvador, this La Cumbre SL-34 lot showcases the distinct profile of the SL-34 varietal. Originally developed in Kenya, SL-34 is widely recognized for its complex acidity and vibrant, fruit-forward character. When roasted by Case Coffee Roasters, these inherent qualities are highlighted through notes of peach, orange candy, and caramel.

While every harvest offers a unique expression of its terroir, coffees from El Salvador often balance sweetness with a refined structure. To better understand the nuances of these specific descriptors, it is helpful to reference the flavor wheel, which provides a framework for identifying the diverse aromatic compounds found in specialty coffee. By focusing on the interplay between the SL-34 varietal and the careful processing methods employed at La Cumbre, this coffee offers a clear window into the meticulous work of producer Emilio López Diaz.
