From the roaster

Our signature espresso blend: jabs of fruit, sugar, and spice with a floral aroma and clean finish. With notes of caramel, peach, and sugar cane, this light-medium roast delivers a delightful punch.

We roast our espressos on Mondays and Tuesdays and recommend letting Southpaw rest for 8 days before brewing.

The Signature Story

Southpaw is a bright and juicy espresso blend that earns its name from being nimble, surprising, and packed with a punch. Combining coffees from Latin America and Africa, the shot is well-balanced, achieving a complex and sweet flavor profile with enough body to shine in short milk drinks.

Southpaw is designed to work well as a straight shot or in drinks 6 ounces and under, such as a cortado or macchiato.

Brew Parameters

If your machine is programmable, we recommend pulling this espresso with the group head set at 199 degrees Fahrenheit. Please note: though we offer an Espresso Grind option, we strongly recommend that you grind your own espresso due to the variability of home espresso machines and the fine-tuning required to dial in shots.

Dose: 20 grams Yield: 32-36 grams Time: 26-30 seconds Drop: 6-8 seconds (bottomless filter) Rest: 8-12 days off roast

Southpaw is best dialed in as a straight, slightly ristretto shot.

Context

Southpaw, a signature blend from PT's Coffee Roasting, represents a thoughtful marriage of origins, drawing its character from both Latin America and Africa. By combining beans from these two distinct coffee-growing regions, the blend aims to balance the structured sweetness often associated with Latin American profiles with the vibrant, fruit-forward acidity frequently found in African coffees. The roaster highlights notes of caramel, peach, and sugar cane, a combination that invites drinkers to explore the nuances of sweetness and stone fruit.

When evaluating such complex profiles, enthusiasts often find it helpful to reference the flavor wheel to better articulate the specific sensory experiences found in the cup. While Latin American coffees are often celebrated for their chocolatey, nutty foundations, African coffees are frequently prized for their bright, aromatic qualities. Southpaw serves as an accessible entry point for those looking to experience how these diverse regional characteristics can harmonize within a single roast.
