Coffee Details

We are delighted to say this is our 6th year working with coffee producer Gerardo Trejo. Gerardo's picturesque family farm is situated in the volcanic Santa Barbara mountain range overlooking the breathtaking Lake Yojoa. The micro-climate formed by the large lake and steep volcanic peaks creates a prime climate for growing quality coffee. These pristine conditions, combined with Gerardo’s skill and sustainable farming practices, make for one stunning coffee that we are proud to offer again this year.

Context

Produced by Gerardo Trejo in the Santa Barbara region of Honduras, this SL-28 varietal represents a distinct offering from Case Coffee Roasters. While the SL-28 varietal is historically celebrated for its complex acidity and vibrant profile, this specific lot showcases a nuanced character defined by notes of plum, white peach, and black currant.

When evaluating such profiles, it is helpful to reference the flavor wheel to better identify the subtle transitions between stone fruit and berry-like qualities. Because SL-28 is often associated with high-toned, bright acidity, it frequently provides a unique departure from the more traditional, chocolate-forward profiles often found in Central American coffees. By focusing on the specific cultivation practices of producers like Gerardo Trejo, roasters are able to highlight the inherent clarity and fruit-forward potential that this particular varietal can achieve when grown in the high-elevation microclimates of Santa Barbara.
