— Everyday Coffee
Context
Sourced from Kayon Mountain Farm in the Shakiso area of Guji, this washed Ethiopian celebrates heirloom varieties grown at substantial elevation—1900–2200 meters above sea level—where cooler conditions typically favor complex acidity and nuanced aromatics. The washed process strips the fruit layer before fermentation, allowing the bean's inherent character to emerge with clarity. Everyday Coffee identifies layered sweetness across cooked red apple and bergamot notes, framed by English breakfast tea and mellow toffee—a profile that suggests both fruit-forward brightness and structured body, grounded in the terroir of Ethiopia's Guji region.
