This microlot from Sítio Canaã is the result of our long standing partnership with João Hamilton dos Santos and the Serra dos Ciganos community, a collaboration that has grown steadily since 2011. Over the years, regular visits and close exchange have focused on refining harvesting and post harvest decisions, always with the goal of improving cup quality through practical, repeatable changes.
The farm sits near the Serra dos Ciganos mountain range in Mogiana, São Paulo, at elevations between 1200 and 1350 meters. Cooler conditions at this altitude allow slower cherry maturation, supporting structure and sweetness in the Arara varietal. Processing takes place at the Serra dos Ciganos community mill, developed together to give producers full control over fermentation and drying.
Natural drying on raised beds, careful turning, and extended drying times are used to preserve clarity and balance. This coffee reflects years of shared work, regional knowledge, and a consistent approach to treating coffee as a finished product rather than a commodity.
