Passionfruit & raspberry, juicy body, jammy texture and a lingering finish.

Almost every year for the past five years we have made it to the Hartmann Family Estate and every year we are impressed. Running a business with siblings and creating not only a consistent product, but such an amazing product, year on year, is such a huge feat. This year we decided to pick up a naturally processed lot of Caturra and Catuai to demonstrate their savvy processing skill set. This Coralia lot can be described as nothing but big! Think passionfruit and raspberry flavours with a jammy texture and mouthfeel. You are going to love it!

Context

The Coralia lot, produced by the Hartmann Family Estate, originates from the Santa Clara region of Chiriqui, Panama. This specific offering from Five Senses features a blend of Caturra and Catuai varietals. Because this coffee undergoes a natural process, it often exhibits a distinct profile compared to washed counterparts, frequently highlighting the inherent sugars of the coffee cherry.

In the cup, the roaster identifies vibrant notes of passionfruit and raspberry. When evaluating such profiles, it is helpful to reference a flavor wheel to better categorize these fruit-forward characteristics. While natural-processed coffees are often celebrated for their heavier body and intense sweetness, the specific expression of these traits depends heavily on the unique microclimate of the Chiriqui highlands. This lot serves as a compelling example of how traditional varietals can be elevated through careful post-harvest handling and precise roasting techniques.
