From the roaster

Adriana Diaz Castillo is a third-generation coffee farmer who, together with her husband, deviated from the family’s traditional path to start farming exotic coffees. Eight year ago, they started on their journey and have since won prestigious awards including Producer of the Year.

Their Gesha stands out with syrupy notes of sweet lemonade, delicate bergamot, and subtle wintergreen. It’s a true expression of their brave commitment to quality.

Beyond coffee, their farm is a place for creativity and sustainability. They use coffee byproducts in foods and grow crops like bananas, citrus, and avocados. Adriana is incredibly connected to the land and hopes to bring visitors to the farm where they can also connect with mythological legends rooted in nature.

Context

Produced by Adriana Diaz Castillo, this El Progreso lot from Colombia showcases the refined potential of the Gesha varietal. Roasted by George Howell Coffee, the coffee presents a profile defined by sweet lemonade, delicate bergamot, and subtle wintergreen. Gesha is widely prized in the specialty industry for its floral, tea-like clarity and complex aromatic structure, which often challenges traditional expectations of cup profile.

When evaluating such nuanced coffees, tasters often look to the flavor wheel to categorize the interplay between bright citrus acidity and the more herbal, cooling notes found in this specific selection. By focusing on the meticulous cultivation practices of producers like Adriana Diaz Castillo, roasters are able to highlight the distinct characteristics inherent to the Gesha plant. This offering serves as a compelling example of how careful processing and roasting can elevate the unique qualities of a single-origin Colombian harvest.
