Coffee overview

Jailer Plazas operates the El Silencio farm, which we have been buying from for several years now. This year we were able to sample much more of their production, and this washed Gesha stood out for its very soft and subtle cup. It has very high complexity and depth across a range of florals and less acidic berries. A nice change up to usual Colombia Gesha fare. This coffee is also featured in the Airworks October UL subscription.

Context

Produced by Jailer Plazas in the Palestina region of Colombia, this lot showcases the meticulous work of H+S Coffee Roasters. The coffee features the Gesha varietal, which is widely celebrated in the specialty industry for its distinct floral aromatics and tea-like clarity. By utilizing a washed process, the producer emphasizes the inherent characteristics of the bean, resulting in a cup profile defined by notes of rose hips, milk tea, and elderberry.

When evaluating such nuanced profiles, tasters often reference the flavor wheel to better articulate the delicate interplay between floral and fruit-forward acidity. While washed coffees are generally prized for their clean, bright acidity and transparent expression of terroir, the specific combination of the Palestina microclimate and the Gesha cultivar provides a unique sensory experience. This offering serves as a refined example of how careful cultivation and processing can elevate the inherent qualities of a high-value varietal.
