Over 1700 farmers deliver freshly picked ripe coffee cherries from their familial gardens to the Ngogomo wet mill and its surrounding collection sites in northeastern Burundi’s Muyinga province.  The wet mill does the crucial work of removing the fruit of the coffee cherry and drying the seeds for export.  Although Burundi only began cultivating coffee 100 years ago, coffee now accounts for the majority of its exports.  When premiums are paid to the producers based on quality, this international trade can create meaningful economic growth in the rural areas that cultivate and process specialty coffee.  With so much of the work being done by hand, this trade benefits many individuals and families.

Ngogomo processes coffee in the washed method.  Red bourbon coffee cherries are depulped of their fruit and the seeds are soaked under water in fermentation tanks before being washed in channels and soaking tanks and then finally dried on raised beds for 2-3 weeks.  Mechanical and hand sorting is built into each step of the process.  The end result of this careful processing and sorting is a coffee that is beautiful to look at and to drink.
