History

We are delighted to share this curiosity coffee that has been carefully processed and reflects notes of sweet apricot and ginger.

This is our third year of working with the respected Finca La Indonesia in Nariño, this coffee is the result of more than 80 years of family tradition led by Frank Rivas Torres and his siblings. Guided by Frank’s expertise as a Q Grader, every cherry is carefully selected using Brix measurements to ensure peak ripeness and exceptional sweetness. The coffee undergoes an innovative extended washed fermentation process, combining 72 hours of dry fermentation with 48 hours of low-oxygen wet fermentation for remarkable clarity and complexity in the cup. High-altitude cultivation and slow cherry maturation create vibrant and layered flavor. More than a coffee, this lot represents the Torres family’s commitment to elevating Nariño’s reputation through sustainability, craftsmanship, and uncompromising quality.

Context

Sourced from Frank Rivas Torres in Nariño, Colombia, this lot showcases the Caturra Chiroso varietal through a distinctive washed process enhanced with carbonic maceration. The combination of controlled fermentation and careful washing creates a coffeefolk profile emphasizing delicate florality and subtle spice—a departure from the heavier fruit-forward character typical of fully natural-processed coffees. Prolog Coffee's notes of sweet apricot, ginger, and floral tones suggest a refined extraction that highlights the varietal's inherent aromatics and the processing technique's contribution to clarity. This represents the kind of nuanced, technique-forward coffee increasingly sought by specialty roasters exploring how fermentation choices shape cup character.
