About: For six generations, the Silva family has nurtured coffee cultivation at Finca La Fany. Originating in the early 1900s through the efforts of Fabio Morán, this legacy has persevered through the decades. By the early 1990s, when Rafael Sr. assumed stewardship of the land, La Fany had already earned distinction for producing some of the finest coffee in the region. Today, Rafael Jr. continues to build on that foundation, embracing sustainable methods to safeguard the farm's vitality for generations to come. He has instituted a vermicompost programme that generates organic compost directly on the farm, significantly reducing reliance on chemical fertilisers. This lot comes from La Fany's Red Bourbon trees, naturally processed by drying whole cherries on raised beds. Slow and careful drying allows the fruit character to fully develop, producing a coffee that's loud and juicy, packed with raspberry and blackberry, finishing with a wave of milk chocolate.

Context

Sourced from the Apaneca region of Ahuachapán, this El Salvador lot from the Silva family highlights the classic profile of the Red Bourbon varietal. Cultivated at 1450-1550 masl, the coffee undergoes a natural process, a technique where the fruit remains intact during drying to influence the final cup profile. Generally, natural-processed coffees are known for their heavier body and pronounced fruit-forward characteristics compared to washed counterparts.

Roasted by Proud Mary Coffee, this specific selection features tasting notes of raspberry, blackberry, and milk chocolate. These descriptors align with the sweet, berry-toned spectrum often found on the flavor wheel when evaluating high-quality Bourbon cultivars. By balancing the inherent sweetness of the Red Bourbon variety with the intensity imparted by the natural drying method, this coffee offers a distinct expression of its Salvadoran terroir, showcasing the meticulous work of the Silva family in the Ahuachapán highlands.
