The Story

Only the ripest coffee cherries are harvested, then selected by density and rinsed. The pulp and fruit are removed from the coffee cherry, leaving a thin layer of sticky mucilage. Then the cherries are dried on air-flow canopy beds for 16-20 days.

Filadelfia II is part of Finca Filadelfia, a familial inheritance divided among twelve siblings united in purpose. They keep the farm’s original name in honor of their parents. Their farm is accompanied by a small natural forest reserve that maintains excellent soil for their coffee and provides water.

Their father has been a source of inspiration and motivation for the siblings. With more than twelve years as the head of quality and buyer for InConexus in Huila, he is a respected figure among coffee growers. His commitment to quality has elevated the standards of coffee production far beyond Filadelfia. He teaches the younger generation and fellow growers the art of cupping, helping them enhance the quality of their coffee.

An on-site laboratory built by Ramón's father has helped them experiment with alternative processing methods and share advancements with neighbors, transforming Filadelfia into a hub of learning and innovation for the local coffee community.

About the Varietal

Pink Bourbon was first "discovered" in Colombia in 2014. Farmers there believed it was a spontaneous hybrid of Red and Yellow Bourbon, similar to the Orange Bourbon mutation and the rest of the coffee world followed suit. Through recent genetic testing, however, it is now understood that Pink Bourbon is actually an Ethiopian Landrace imported anonymously to Colombia, most likely to help diversify the coffee population. While visibly similar, it stands apart from the Bourbon varieties that originated in Yemen.

Context

Produced by Ramón Hoyos in the Huila region of Colombia, this Finca Filadelfia Pink Bourbon is a standout offering from PT's Coffee Roasting. The coffee features the Pink Bourbon varietal, a hybrid known for its distinct color and complex cup profile. By utilizing a honey process, the producer leaves a portion of the fruit mucilage on the bean during drying, which often bridges the gap between the clarity of washed coffees and the intensity of natural-processed lots.

When evaluating such coffees, enthusiasts often consult a flavor wheel to identify the interplay between acidity and sweetness. In this specific lot, the combination of the honey process and the Pink Bourbon varietal results in a profile characterized by strawberry jam, milk chocolate, and red grapefruit. Grown at 1800 masl, this selection highlights the meticulous cultivation practices found within the renowned coffee-growing landscapes of Huila.
