From the roaster

Finca El Espejo is located in Santa María, Huila, Colombia, and managed by Reinel Borbon, a 48-year-old, second-generation coffee grower who has been in the coffee industry for more than 15 years. The farm consists of 4 hectares of land and sits at an elevation of 1,850 m.a.s.l. Reinel initially harvested lentils and grains on the farm, but he saw an opportunity with coffee. Now, he has around 13,000 coffee trees in production of the Pink Bourbon, Caturra, and Colombia varieties. All lots start with a careful harvest of the ripest cherries and an initial 20-hour dry fermentation in cherry before being de-pulped. The coffee was then placed in open tanks to ferment for 48 hours before being washed and placed to dry in raised beds. This particular Pink Bourbon lot is honey processed, so it was dried in mucilage.

Reinel’s expertise in fermentation and processing is apparent in his coffees. We taste a delicate wininess in this cup. It is playful but clean and balanced like pineapple juice, with deep sweetness and subtle spices like dates and mulled wine. In structure and body this coffee reminds us of ripe nectarine.

Context

Produced by Reinel Borbon in the Huila region of Colombia, El Espejo showcases the distinct potential of the Pink Bourbon varietal. This specific lot, roasted by Regalia Coffee, utilizes a honey process, a technique that often bridges the gap between washed and natural profiles by retaining a portion of the fruit mucilage during drying. As detailed in our processing methods explainer, this approach can influence the final cup’s body and sweetness.

In the cup, El Espejo presents a complex profile characterized by wininess, pineapple juice, dates, mulled wine, and ripe nectarine. These descriptors highlight the vibrant acidity and deep, fruit-forward sweetness often sought by enthusiasts of high-quality Colombian coffees. To better understand how these specific attributes align with broader sensory categories, we recommend consulting the flavor wheel to explore the nuances of these tasting notes in a wider context.
