From the roaster
Each year we select an in-season coffee from one of our Direct Trade partners to feature as the Holiday Bean. This offering from Finca Villa Loyola's Suyusama Program offers a beautiful balance of nutty, citric, and chocolatey flavors—lively and festive!
Aromas of red grape, clementine, and hazelnut greet you, followed by notes of sangria and marshmallow in the cup. Pomelo acidity and milk chocolate sweetness resolve into a Brazil nut finish.
The Story
“Suyusama” means "beautiful place" in Quechua, the language of the Indigenous Peoples of the Central Andes. Founded in 2004 by our Direct Trade partners at Villa Loyola, the Suyusama program promotes participatory farm management processes for local and regional sustainability. The program educates farmers in methods of organic agriculture, coffee processing, and understanding the value of their crop. Alongside these skills, Suyusama also strives to improve sustainability throughout Nariño by focusing on five areas of impact: political, economic, social, cultural, and environmental.

Context
Produced by Finca Villa Loyola in the Nariño region, The Holiday Bean | Suyusama Washed is a testament to the distinct profile of Colombian coffee. This lot undergoes a washed process, a method typically employed to highlight the inherent clarity and acidity of the bean. By removing the fruit flesh before drying, producers often achieve a cleaner cup profile that allows delicate nuances to shine through.
Roasted by PT's Coffee Roasting, this selection presents a complex array of flavors ranging from bright citric notes like clementine and pomelo to deep, comforting tones of milk chocolate, hazelnut, and Brazil nut. The inclusion of red grape and sangria notes adds a vibrant, fruit-forward dimension to the experience. To better understand how these specific characteristics—such as the interplay between nutty undertones and bright fruit—fit into the broader spectrum of coffee, consult the flavor wheel for a comprehensive guide to sensory evaluation.
