From the roaster

This coffee is 6oz.

Why? Well it's expensive and if I did 10 or 12 ounce we'd have to charge an astronomical amount. I bought a small amount of this and basically roasted a smaller amount at a lower price point so that we can all sort of "try" this coffee. This wont be your daily or you weeks long treat. It's a one and done.

Yemen is a warn torn country. Most coffee that gets out has to pay a price to various warlords to pass through each region. It's a miracle we get yemen at all. On top of that it's stepped terrace farming which doesn't lend itself to bulk product production.  That said it has great elevation and a genetic heritage that is well original ethiopia heirlooms. For that, there is value. That said yemens tend to have a very diverse profile full of strange things like banana bread or in other cases tobacco and licorice the black kind no-one likes. This one being an aerobic natural maybe hides or accents some of those weird things and brings out a lot of fruity bready sweet stuff. I really enjoyed this. I hope you do to. If you like what I buy, you should snag this. Not a lot.

Context

The Yemen Anaerobic Natural, offered by Royal Mile Coffee, represents a unique intersection of traditional cultivation and modern processing. Sourced from the historic Yemen region, this lot utilizes Heirloom coffee plants, which are often celebrated for their genetic diversity and complex profiles. By employing an anaerobic natural method, the producers have influenced the final cup to exhibit distinct characteristics, including notes of banana bread, tobacco, licorice, and a pronounced fruity sweetness.

While anaerobic processing is known to intensify fermentation-driven flavors and body, the specific interplay of these techniques with Yemeni terroir creates a profile that balances bready, savory, and sweet elements. For those looking to better understand how these specific descriptors align with broader sensory categories, consulting a flavor wheel can provide a helpful framework for identifying the nuances present in this particular roast. This coffee serves as a compelling example of how experimental processing can evolve the classic profile of a storied origin.
