Context
The 2025 David Berrio, sourced from the La Casita farm in Colombia, represents a distinct selection from producer David Berrio. This "End of Season" lot features the Chiroso varietal, a coffee known for its unique genetic profile and often celebrated for its complex, vibrant acidity. As with many high-quality offerings from this region, the specific processing and harvest timing play a critical role in the final cup profile.
Roasted by Sey Coffee, this lot invites a careful exploration of its nuanced characteristics. When evaluating such specific varietals, tasters often find it helpful to reference the flavor wheel to better articulate the subtle shifts in aromatics and mouthfeel. While general expectations for Colombian coffees often lean toward balanced sweetness and bright fruit tones, the Chiroso varietal frequently offers a more idiosyncratic experience. This release serves as a focused look at the culmination of the harvest season under David Berrio’s stewardship.
