From the roaster
Diana took over managing her father's small farm in 2011 and is a welcomed recent addition to our Chiroso project in Urrao. In the cup we find what we are starting to call a traditional Chiroso profile: tropical fruit, very bright acidity, with some florality.

Context
The 2026 Diana Arboleda Tabares release from Sey Coffee highlights the distinct profile of the Chiroso varietal cultivated in the Urrao region of Colombia. Produced by Diana Arboleda Tabares, this lot is characterized by a vibrant sensory profile featuring tropical fruit, bright acidity, and florality.
Chiroso is a unique varietal that has gained recognition for its ability to produce complex, aromatic cups that often challenge traditional expectations of regional profiles. When evaluating such coffees, tasters frequently reference the flavor wheel to identify the nuanced interplay between high-toned acidity and delicate floral aromatics. While general characteristics of Colombian coffees often lean toward balanced sweetness and nutty undertones, lots from high-elevation pockets like Urrao frequently exhibit a more pronounced, fruit-forward clarity. This specific offering serves as a compelling example of the meticulous work being done by producers to showcase the potential of the Chiroso varietal within the diverse landscape of Colombian coffee production.
