Context
The 2026 Juan Danilo Florez from Las Mañanitas represents a distinct expression of the Chiroso varietal cultivated in the Urrao region of Colombia. This specific lot, produced by Juan Danilo Florez, highlights the unique terroir of the area, which is often noted for producing coffees with high aromatic complexity. When evaluating such profiles, tasters frequently reference the flavor wheel to identify the interplay between bright acidity and nuanced aromatics.
Chiroso is a varietal increasingly recognized for its ability to bridge the gap between vibrant, fruit-forward profiles and delicate, tea-like structures. While natural-processed coffees often lean toward heavier, jammy fruit notes, washed-processed lots like this one typically emphasize clarity and precision. In this cup, the combination of yellow tropical fruit, soft florals, and hops offers a sophisticated sensory experience that reflects the meticulous processing standards maintained at Las Mañanitas.
