From the roaster

This is the first of three Pink Bourbon lots we’ll be featuring from the main harvest at Finca Costa Rica, Faver Ninco’s 10-hectare farm in Santa Maria. At just over 2,000 masl, Finca Costa Rica experiences cooler temperatures than much of the region, with more limited sunlight and less regular rainfall. These factors combine to produce more sporadic flowering and nearly year-round picking. Within that fluid cycle, Finca Costa Rica still has a defined main harvest season that runs from May to August, with this first lot coming from the early and peak portions of the harvest. This coffee presents with layered flavors, brisk acidity, and light florality, with notes of bright red fruit, herbal tea, and honeyed sweetness.

Context

This offering from Tandem Coffee Roasters highlights the distinct profile of the Pink Bourbon varietal, a hybrid known for its unique appearance and complex cup characteristics. Produced by Faver Ninco in the Huila region of Colombia, this lot is processed using the washed method, which typically emphasizes a clean, vibrant acidity and clarity of flavor.

At an elevation of 2000 masl, the coffee develops a nuanced profile that balances bright red fruit notes with a delicate, herbal tea-like quality and a lingering honeyed sweetness. When evaluating such profiles, enthusiasts often consult a flavor wheel to better identify the subtle interplay between these fruit-forward and botanical elements. By focusing on precise processing and high-altitude cultivation, this selection showcases the meticulous work of the producer and the specific terroir of the Colombian highlands.
