From the roaster

This year we decided to bring in the natural processed lot from La Joya, due to its intense, sweet and unique flavor profile. The cup reminds us of both bananas foster and a caramel covered apple, complete with burnt sugar notes and a hint of rum sauce. This coffee is perfect for those looking for something a bit out of the ordinary.

Coffee Details

Longtime customers may recognize the name La Joya, as we have partnered with owner/producer Yermy Pedraza for many years. This is the first time we have offered his natural process coffee, and we are very impressed with the quality and sweetness. We are proud of our longstanding relationship, and hope to continue this relationship for many years to come. Mr. Pedraza not only runs his farm extremely effectively, but also maintains a career in engineering. While visiting his farm, we were very impressed with how he runs such a meticulous, efficient operation. He has built raised beds for drying his coffee, instead of drying on patios which is the custom in Colombia. This ensures a more even dry and better quality.

Context

Produced by Yermy Pedraza, the Colombia La Joya Natural represents a distinct expression of Colombia coffee production. This lot is processed using the natural method, a technique where the coffee cherry remains intact while drying, which often imparts a heavier body and intensified sweetness to the final cup. Roasted by Case Coffee Roasters, this selection highlights a decadent profile characterized by notes of bananas foster, caramel covered apple, burnt sugar, and rum sauce.

When evaluating such complex profiles, it is helpful to reference a flavor wheel to better identify the nuances between caramelized sugars and fruit-forward acidity. While natural-processed coffees are frequently celebrated for their syrupy mouthfeel and deep, fruit-driven complexity, the specific character of this lot reflects the unique conditions managed by the producer. This coffee offers a rich, dessert-like experience that showcases the versatility of Colombian harvests when paired with careful post-harvest processing.
