From the roaster
Discover how varietal genetics shape flavor in this exclusive sampler from the farm of one of our favorite producers, Gerardo Trejo. Even when coffee grows under the same conditions—same soil, altitude, and climate—different varietals create wildly different taste experiences. It's like comparing apple varieties; each brings its own personality to your cup. This special collection bundles three standout varietals—Geisha, Pacas, and SL-28—all from Gerardo Trejo. Getting to taste multiple varietals from one farm in direct comparison? That's the kind of rare opportunity that gets us coffee lovers excited. This sampler includes an 8oz bag of each of the three unique varietals.
Coffee Details
We are delighted to say this is our 6th year working with coffee producer Gerardo Trejo. Gerardo's picturesque family farm is situated in the volcanic Santa Barbara mountain range overlooking the breathtaking Lake Yojoa. The micro-climate formed by the large lake and steep volcanic peaks creates a prime climate for growing quality coffee. These pristine conditions, combined with Gerardo’s skill and sustainable farming practices, make for some truly stunning coffees that we are proud to offer again this year.

Context
The Honduras 'Gerardo Trejo' Limited Edition Varietal Sampler represents a focused exploration of the Santa Barbara terroir, a region widely recognized for its complex microclimates and high-quality production. Sourced from producer Gerardo Trejo, this collection highlights the meticulous work occurring within this specific Honduran landscape. By offering a sampler of distinct varietals, Case Coffee Roasters provides a unique opportunity to observe how genetic diversity influences the final cup profile.
When evaluating such diverse offerings, it is helpful to reference the flavor wheel to better identify the nuanced characteristics inherent in each varietal. While individual lots often display distinct profiles based on processing methods—such as the heavy fruit notes frequently associated with natural processing or the tea-like clarity often found in washed coffees—this sampler invites a deeper appreciation for the specific agricultural practices employed by Trejo. This release serves as a testament to the evolving standards of specialty coffee production in Honduras.
