Jamison Savage has taken the queen of varieties and married her to wine processing, producing some of the most wildly beautiful coffees we've ever discovered. He's become one of, if not the, foremost producer of Carbonic Maceration experimental Geishas in the world, dialing in unique processes that combine different gases, pressures, extended times, and pH levels to create flavor profiles uniquely his own.

Echo carries the torch of a well-crafted Carbonic Maceration coffee and elevates it even further. Whole cherries rest in tanks with cascara, pressurized with CO2 to build a pre-fermentation environment, before the coffee is washed clean and dried. The result is a cup that sparkles at first, then settles into something juicy and sweet as it cools.

Context

The Echo Gesha, offered by Corvus Coffee Roasters, represents a sophisticated intersection of high-end cultivation and experimental processing. Produced by Jamison Savage in Panama, this lot utilizes the Gesha varietal, which is widely celebrated in the specialty industry for its distinct floral and tea-like clarity.

What sets this specific release apart is the producer's application of a cascara-infused carbonic maceration technique. By integrating processing methods that involve the coffee cherry’s own dried fruit pulp during fermentation, the producer aims to amplify the inherent complexity of the bean. When evaluating the resulting cup, which features notes of jasmine, cabernet grape, and tropical fruit, drinkers may find it helpful to reference a flavor wheel to better categorize these nuanced aromatics. This coffee serves as a compelling example of how modern post-harvest techniques can push the boundaries of traditional flavor profiles.
