Produced by Jamison Savage in Panama, this lot employs nitrogen anaerobic natural processing, an experimental technique that intensifies fruit-forward aromatics. Natural-processed coffees tend to develop heavier fruit notes, and this method's anaerobic phase pushes complexity further. Corvus Coffee Roasters identifies kiwi, peach, and merlot grape—a compelling range from bright stone fruit to darker wine undertones. The result reflects both terroir and processing innovation: a coffee where Geisha's inherent complexity meets the bold fruit expression that nitrogen fermentation can amplify.
