From the roaster

250 grams of whole roasted coffee beans.

Just arrived in the roastery! This clean washed lot produced by Leodan Huaman Villegas on his family’s farm, La Palma in the region Cajamarca in Peru. His family has been producing coffee for more than 60 years. In 2015 Leodan and his brother Eber took over the production from their mother.

After harvesting, the ripe coffee cherries undergo a flotation process to remove debris and separate lower-density beans, followed by 12 hours of fermentation in tanks. The cherries are then mechanically depulped without water using an automated processing module.

After depulping, the seeds are washed with clean water and dried on raised beds for 12 days

Context

Sourced from the Cajamarca region of Peru, this lot is produced by Leodan Huaman Villegas. The coffee features the Caturra varietal, which is widely recognized for its balanced profile and adaptability. As a washed coffee, this selection emphasizes the inherent characteristics of the bean, often resulting in a clean, bright cup profile. Da Matteo, the roaster, highlights specific notes of honeydew, tangerine, and grapes in this particular harvest.

When evaluating such profiles, it is helpful to reference the flavor wheel to better identify the nuances between stone fruits and citrus acidity. While washed coffees are typically celebrated for their clarity and acidity, the specific terroir of the 1800-2000 masl range in Cajamarca plays a significant role in shaping the final cup. This offering provides a clear look at the potential of high-altitude Peruvian production when managed with precise processing techniques.
