Coming to you from the birthplace of coffee, the Halo Beriti demonstrates just why this origin is so celebrated by coffee lovers world-wide. This lot comes from the mill, named after the adjacently located Halo Beriti village in the Gedeb region of southern Ethiopia. 750 small holder farmers surrounding the mill bring their medley of Bourbon, Typica and heirloom varietal cherries in for processing - in this case, using the washed method. Grown at a staggering 2100 - 2300 meters above sea level, the cherries have a slow maturation that results in a truly beautiful cup; honeysuckle aromas that lead into a gentle peach flavour, alive with juice acidity.

Context

Sourced from the high-elevation landscapes of the Gedeb region, the Halo Beriti is a quintessential example of the refined profiles emerging from Ethiopia. This lot undergoes a washed process, a method typically employed to highlight the inherent clarity and delicate acidity of the bean. By removing the fruit flesh before drying, producers allow the intrinsic characteristics of the terroir to take center stage, often resulting in the elegant, tea-like structures and nuanced sweetness that define the region's finest exports.

Roasted by Five Senses, this coffee presents a sophisticated interplay of creamy textures and bright, stone-fruit aromatics. When evaluating such complex profiles, enthusiasts often find it helpful to reference a flavor wheel to better identify the subtle transitions between floral honeysuckle notes and the lingering, honey-like finish. This selection serves as a compelling study in how meticulous processing and specific regional conditions converge to create a balanced, juicy cup.
