Habtamu Fekadu Aga took over this washing station in 2020, and in 2022 added a Penagos pulper to build cleaner, more consistent lots. The care is methodical: cherries are held with about ten percent mucilage, fermented for 24 hours, handwashed, then dried on raised beds out of direct sun for 9 to 12 days, turned and inspected every few hours by two dedicated quality-control managers who track moisture and pull defects at each pass. That attention lands in the cup as something silky and aromatic: lavender and jasmine up top, anise threading through, and ripe plum on the close.

Context

Sourced from the renowned Ethiopia · Yirgacheffe region, this lot from producer Habtamu Fekadu Aga showcases the distinct profile often associated with high-elevation cultivation. The coffee is composed of Heirloom varieties, which are celebrated for their genetic diversity and complex aromatic potential. Processed using the washed method, this selection emphasizes clarity and precision, allowing the delicate floral and spice-forward characteristics to shine.

Roasted by Four Barrel Coffee, this offering presents a sophisticated sensory experience featuring notes of anise, jasmine, lavender, and ripe plum. While washed coffees are typically prized for their clean acidity and bright, tea-like qualities, the specific interplay of these flavors can be explored further using a flavor wheel. This coffee serves as a quintessential example of the elegance found in Yirgacheffe, reflecting the meticulous care taken during both the harvest and the subsequent processing stages to preserve the integrity of the cup.
