Context
The Colombia Cafe Ticuna Tabi, sourced from the El Mirador farm in the Suaza region of Colombia, represents a distinct expression of the Tabi varietal. This specific lot is prepared using the washed process, a method typically employed to highlight the inherent acidity and clean profile of the bean. Roasted by H+S Coffee Roasters, the coffee presents a unique sensory profile characterized by notes of yuzu, marshmallow, and green mango.
While washed coffees are generally celebrated for their bright, crisp clarity, the Tabi varietal itself is a hybrid cross of Bourbon, Typica, and Timor, often noted for its resilience and complex cup quality. When evaluating such specific flavor profiles, enthusiasts often refer to the flavor wheel to better categorize the interplay between the citrus-forward yuzu and the subtle, sweet undertones of marshmallow. This offering provides a compelling look at how regional terroir and careful processing influence the final cup.
