From the roaster

Aidé Garro returns to our menu for a fifth time with another impeccably washed chiroso. This is an incredible heirloom variety—once thought to be a local mutation of caturra specific to Antioquia, Colombia, but now believed to have a mysterious genetic link with Ethiopian landraces.

Aidé and her husband, Pedro, cultivate this variety exclusively on their farm, Finca El Eden. In the cup, it's a beautiful expression of the classic chiroso flavor profile—floral like gesha, but sweeter and rounder. This will shine in any brewing method with lovely notes of watermelon candy, cherry, mango, lime, jasmine, and elderflower.

Context

Produced by Aidé Garro in the Antioquia region of Colombia, this lot showcases the unique potential of the Chiroso varietal. As a washed coffee, it emphasizes a clean, vibrant profile that allows the inherent characteristics of the bean to shine through. While washed coffees are often celebrated for their bright acidity and clarity, this specific selection from Partners Coffee presents a complex array of fruit and floral notes, ranging from watermelon candy and mango to delicate jasmine and elderflower.

When evaluating such a diverse flavor profile, it can be helpful to reference a flavor wheel to better identify the nuances between the citrus-forward lime notes and the deeper stone fruit qualities. This offering highlights the meticulous work of producers like Aidé Garro, whose dedication to the craft of cultivation and processing continues to define the high standards of the region.
