From the roaster

This fully washed coffee from producer Vladimir Calambás is a relatively unknown variety called borbón de la montaña, "mountain bourbon." Only appearing near Inzá, Cauca, it appears to be a local cultivar that is uniquely well-adapted to the region's highest elevations.

A sweet, resonant coffee, we're tasting flavors of watermelon candy, strawberry, and cherry, subtle florals, and buttery caramel. This will make an excellent filter coffee or a wonderful seasonal espresso.

Context

Produced by Vladimir Calambás in the Inzá region of Cauca, this Colombia offering showcases the distinct character of the borbón de la montaña varietal. As a washed coffee, the processing method emphasizes the inherent clarity and brightness of the bean, allowing the vibrant profile of watermelon candy, strawberry, and cherry to shine through alongside subtle floral notes and a buttery caramel finish.

Sourced by Partners Coffee, this lot highlights the meticulous cultivation practices found in the high-altitude landscapes of Cauca. While washed coffees are often celebrated for their clean acidity and refined sweetness, the specific terroir of Inzá frequently contributes to a complex, layered cup.
